Description
Chinese cuisine. In-8° (b.c., some normal foxing, some lightly browned edges). - First edition of the first book on Chinese cuisine in France. Lecourt, a native Chinese speaker, was postmaster of the French concession at T'ien-Tsin. He married a Chinese woman who introduced him to cooking and helped him to write this book, which is scattered with Chinese ideograms and presents in various chapters grilled, fried, steamed, smoked, boiled and marinated dishes, as well as sauces, sweets and so on. Recipes include steamed shark's fin, fricasseed frogs, steamed turtle, cinnamon blossom compote and swallow's nest soup. Illustrated with full-page and in-text illustrations.
