CHAPTAL, Jean Antoine.
The Art of Making, Managing and Refining Wines by Citizen Chaptal (includes the) Treatise on the Cultivation of Vines [and] A Theoretical and Practical Treatise on the Cultivation of Vines, together with The Art of Making Wine, Brandies, Wine Spirit and Vinegars
Paris, published by Delalain fils, 38 Quai des Augustins [and] In Paris, published by Delalain fils, 29 Quai des Augustins, printed by Marchant, Year X–1801.
2 parts in 2 in-8 volumes, (2) folios, 408 pp., 12 plates and (2)-IX-584 pp., 4 plates of tools, including one fold-out, and 3 fold-out tables. Contemporary fawn sheepskin binding, root-cut and polished, smooth spine decorated with fleurons, gilded motifs and scrolls in the style of the period, orange title label and navy volume number, speckled edges, gilded fillet on the edges (some scuffing on the corners or joints; the lower joint of vol. 2 is slightly split; a few scattered foxing spots).
A rare first edition of the second part (first printing bearing the address ‘Quai des Augustins No. 29’ and the mention of Marchant’s printing house for Volume 2).
One of the original editions published in the same year as the first part, described as ‘the only original edition acknowledged by the Author’ (a second state, not listed in bibliographies as the title page does not bear the reference to Marchant and the publisher Delalain fils’s address has changed: it is now at number 38, no longer at number 29).
This is the original edition of the works that set out the chaptalisation method still used today in wine production.
The illustrations comprise a total of 16 plates, finely engraved in black on copper by Hulk. Volume II includes 3 fold-out tables.
This important treatise also contains numerous articles of gastronomic interest: sugar, the preservation of foodstuffs, fruit preservation, preserves in salt and alcohol, milk, butter, distillation, beet sugar, syrups
