Hilario Alonso Sánchez, a Cuban barman, is at once a practitioner, a writer and a custodian of the history of Cuban mixology. His ‘Manual del Cantinero’ brings together encyclopaedic information on spirits and wine, numerous recipes and their origins (including the story of how the daiquiri came to be, p. 274) and a Cuban approach to bar management and stockkeeping; it rivals Harry Johnson’s *Bartenders’ Manual* as a timeless reference work that remains as relevant as ever.
