ESCOFFIER (Auguste, 1846-1935). Tapuscript "Culinary Treasures of France - Visit to various Departments", comprising 77 p. (in-4) bound with a staple, in a brown paper cover. With annotations in ink. It includes typical recipes from various regions of France such as Auvergne, Provence, Brittany and Savoie. The recipes include Pâtés du Périgueux, souvenirs from culinary exhibitions, Poularde Alice, Perdrix suprêmes à la Périgourdine, Dona Mistral strawberries, Oxtail à la Vigneronne, etc. A typescript signed "Les Trésors culinaires de la France à travers la Provence. From Avignon to Monte Carlo". 1 ff. in-4 with annotations in ink. Auguste Escoffier, nicknamed "Le Roi des Cuisiniers" ("The King of Cooks"), was a culinary writer renowned for his many recipes - including Poussins Joséphine - which led to the modernisation and codification of luxury French cuisine, as well as its globalisation. Our piece is a prime example of this talent.
