In this letter, the famous French chef congratulates his American counterparts on the creation of the "Culinary Review": "The United States of America has been lacking a Culinary Review worthy of this great country, where cooking holds a great place. (...) We must not forget that cooking is the ideal way of bringing people together and brings joy to the home. (...) and it is with great pleasure that I come to greet the dawn of your interesting Revue, to which I wish a long and brilliant existence...".
On the back, Escoffier drew up three menus for Lunch, Dinner and Supper, which included a Noisette of Lamb and Peas à l'Anglaise, a Poularde with Truffles and a Soufflé.
