In 1897, Louis Gallet (and his son Albert), a pork butcher in Montfort-le-Rotrou, a village seven kilometres from Connerré, had the idea of delivering his rillettes by horse-drawn cart to a few local middle-class families. The product was thus marketed to a new category of people.
1968 Gallet rillettes disappeared.
