La Cressonnée was originally an absinthe produced by Fernand Boulanger, a distiller in Pantin in the Seine (now Seine-Saint-Denis), who had the original idea of adding watercress to give it its green colour.
In 1921, whilst aniseed-flavoured spirits were permitted subject to the well-known restrictions (no wormwood and no more than 30° from 1920 to 1922. Subsequently, 40° from 1922 to 1938), his son Paul, confident of its success as the brand was already well-known
