2 parts in 2 volumes in-8, (2) ff, 408 pp. with 12 plates and (2)-IX-584 pp. with 4 plates of tools, one of which folding, and 3 folding tables. Contemporary fawn shagreened and polished basane, smooth spine decorated with gilt fleurons, motifs and roulettes in the taste of the period, orange title-piece and navy tomaison, spotted edges, gilt fillet on the edges (some spidering to the corners or joins, lower jaw of vol.2 slightly split, a few scattered brown spots).
Rare first edition of the second part (first printing with the address "Quai des Augustins n°29" and the mention of Marchant's printing house for volume 2). One of the first editions published in the same year for the first part (a second state, not mentioned in the bibliographies. The title does not bear the indication of Marchant and the address of the publisher Delalain fils has changed: it is 38, no longer 29).
The illustrations comprise a total of 16 plates finely engraved on copper in black by Hulk. Volume II includes 3 folding tables.
This important treatise contains numerous articles of gastronomic interest: sugar, the preservation of substances, fruit preservation, salt and alcohol preserves, milk, butter, distillation, beet sugar, syrups, etc.
