Quarto-sized ordinance comprising 3 pages, signed in Tours on 30 July 1686. Printed document signed (in his own hand) in his capacity as Intendant of the Generality of Tours. Royal Ordinance concerning the number of tax collectors to be appointed in each parish. Engraved vignette bearing the arms of France. Fine copy. Dimensions: 20 x 26 cm
*As an aside: the béchamel sauce that bears his name today was, in fact, the result of refining an older cream-based sauce invented by François Pierre de La Varenne, chef to the Marquis d’Uxelles, who dedicated it to him, as chefs often did for the nobility of the time. The Marquis de Béchameil first created the sauce that would bear his name in the kitchens of the Château de Nointel, in the Oise, then the Marquisate of Nointel.
