Description
[Cookery]. The Perfect School for Culinary Officers, which teaches the duties of the maître d’hôtel and the sommelier; how to make dry and liquid preserves; liqueurs, waters, ointments and perfumes; cooking, carving meat and making pastries. New edition, revised and expanded to include new pastries and liqueurs, and the new stews served today. Paris, Pierre de Bats, 1738.
In-12, x pp., [2] ff., 507 pp., [17] pp. of table of contents, with 18 woodcut illustrations in the text (meat cutting) and 4 fold-out plates outside the text (two with a small tear) depicting laid tables, minor paper restoration on ff. 15–16 and 429–30, a tear along the side of f. 191–92, speckled fawn sheepskin, decorated ribbed spine, red title page, red edges (contemporary binding). Caps, clasps and corners restored.
The first edition dates from 1662. This edition is more or less a reprint of the 1716 edition published by Pierre Ribou. The work went through numerous editions; its practical nature and readability explain its success.
