[LIGER (Louis)]. The Kitchen of the Countryside and the City; or A New French Cookbook, Adapted to the Taste of the Times. A great classic of 18th-century cookery books, bound in an elegant full red morocco. Paris, published by Chr. David, 1756. Volume in-12 (160 x 104 mm), 18th-century binding, re-covered in the 19th century in full red morocco, with a gold-stamped border on the covers and fleurons at the corners, spined with raised bands decorated with panels filled with fleurons in openwork, red leather inserts, decorated cut-outs and chases, speckled edges, 19th-century marbled endpapers. 6ff.n.ch., 473pp., 7p.n.ch. A dark mark on the second cover. Interior fresh and clean. New edition of this important collection of early 18th-century recipes by Louis Liger (1658–1717), an agronomist from Auxerre who wrote numerous works on agriculture and domestic economy. The first edition of this work dates from 1710. "Nearly a thousand recipes for the tables of lords and burghers are divided into three 'books': the first covers bread, pastries, pies, wine, drinks and liqueurs. The second deals with the pantry: sugar, jams, fruit preserves, dairy products; it is intended primarily for ladies. The third is devoted to cooking. It is followed by explanations of specific terms as well as instructions for serving meals during Lent and at other times. The recipes are accompanied by practical notes and, at times, health advice" (Livre en Bouche - 192) Provenance: handwritten bookplate (name illegible) on the flyleaf at the beginning, dated 1820. A fresh and clean copy preserved in a luxury binding.
