Efflam LE MAOUT (born in 1764) went to Paris to study the sciences, including pharmacology. There, he was awarded an honourable mention in 1790 by the College of Pharmacy. He then moved to Brest to become a naval pharmacist. A supporter of the ideas of the Revolution, he was elected to the general council of the commune of ‘Port-Brieuc’ (the name of Saint-Brieuc during the Revolution) and soon opened a chemist’s shop in Guingamp. There, he began selling his ‘Celtic Mustard’, developed in 1802 and highly prized by sailors.
A newspaper of the time compared his mustard to Maille’s in these terms: “A rival to Maille’s mustard in terms of taste, Le Maout’s mustard is superior in terms of health benefits.” Its reputation spread beyond the country’s borders, as it was exported to America and the Russian Empire.
In order to devote himself fully to his passion for scientific research, Efflam Le Maout handed over his business in Saint-Brieuc in 1831 to his son Charles Le Maout (a pioneer in the field of artificial rain).
