The Traité de la châtaigne follows on from the famous Parfait boulanger, published in 1778, and is one of a series of works by Parmentier on economical and nutritious foods for the people, such as potatoes, maize, milk, grains, etc. Parmentier was the first, in his own right, to write a treatise on chestnuts.
In this study, Parmentier was the first to note the presence of sugar in chestnuts. He studied the chestnut tree and chestnuts, how to preserve them, the drying method used in the Cévennes, chestnut flour and how to mix it with different cereals, Corsican chestnut bread, chestnuts cooked Limousin-style, etc.
