CARÊME (Marie-Antoine, known as Antonin). Le Maître-d'hôtel français. Paris, Didot, 1822-1823. 2 volumes in-8, paperback. Rare first edition of this important book. The illustrations include an engraved title in volumes I and II, a frontispiece, 25 fold-out menus and 8 fold-out plates. The book is dedicated to the Robert brothers, who were the doyens of French haute cuisine. As its name suggests, it is a collection of old and new menus.
