CERVIO (Vincenzo). Il Trinciante ampliato, et ridotto a perfettione dal cavalier Reale Fusoritto... Con diverse aggiunte. Roma, Giulio Burchioni, 1593. In-4, ivory vellum (contemporary binding). A rare and precious treatise on the cutting squire, its seventy-four chapters, devoted to the cutting and presentation of meat, poultry, fish and fruit, constitute a source of primary importance on the art of the table and court gastronomy in Cinquecento Italy. It is followed by Aggiunta fatta al Trinciante del Cervio dal Cavalier Reale, then : Il Maestro di casa, ragionamento del Cavalier Reale, each with its own title page. Continuous pagination throughout. The illustrations include 4 full-page engravings and 2 folding plates, one showing knives and the other forks. The first edition appeared in Venice in 1581, a second in 1593, also in Venice, with an additional fold-out plate but without the final section (Il Maestro di casa). This appeared simultaneously with the second Venice edition. Some browned leaves. Westbury, 46.
