Description
[PONCELET (Polycarpe)]. *Nouvelle chymie du goût et de l'odorat, ou l'art de composer facilement et à peu de frais les liqueurs à boire et les eaux de senteurs*. Paris: Pissot, 1774. 2 volumes in one in-8 volume, marbled calfskin, decorated spine, marbled edges (contemporary binding). Third and best edition of this interesting treatise on distillation, illustrated with 6 separate plates engraved by Delagardette.
It was in 1755 that Poncelet first published his *Chimie du goût et de l’odorat*. The first three parts, rich in varied recipes, cover distillation, brandy, sugar, coffee, tea, cider, blackcurrant, aniseed, absinthe, and simple ratafias made from blackcurrants, green walnuts, quinces, juniper berries, etc. The fourth part deals with odours, perfumes and essential oils.
This third edition, entirely revised and considerably expanded, also includes a *New Method for Compounding Fine Liqueurs without Brandy, Wine or Wine Spirit*, ‘Dissertations on the wholesomeness of liqueurs and the harmony of flavours’, ‘Physiological observations on the immoderate consumption of spirits’ and a ‘Supplement in the form of a dictionary’.
The title of the second volume is missing, as is often the case in single-volume bound copies. Missing pages and previous repairs to the headbands and corners, water stain on the side margin, a few foxing spots.
