A Treatise on Grape Syrups and Moscato Wines, and in particular on the art of extracting crystallisable sugar from them and refining it; followed by the Report submitted on this work to His Excellency the Minister of the Interior, by Mr Parmentier, member of the Institut. Paris, D. Colas, Méquignon, 1810. In-8, xiv pp., 162 pp., [1] f., paperback with a speckled purple paper dust jacket. The only edition of this work, which forms part of research aimed at finding substitutes for sugar from the colonies. Parmentier’s report occupies pp. 142–159; it is rather mixed in its assessment, judging Bournissac’s process to be incomplete and too prone to caramelisation. (Quérard I, 474.) A fine copy in its elegant original paperback binding.
