BRISSE (Léon). Baron Brisse’s 366 Menus. With 1,200 recipes and a nutritional calendar, supplemented by instructions on how to serve a grand dinner, including the order in which dishes and wines should be presented. Fifth edition. Paris, E. A gastronomic journalist and culinary writer, Léon Brisse, known as Baron Brisse (1813–1876), is regarded as one of the pioneers of modern gastronomic criticism alongside Alexandre Balthazar Laurent Grimod de La Reynière and Charles Monselet. A contributor to *La Liberté*, he popularised the daily food column before publishing his famous *366 Menus* (first published in 1867), offering a menu suggestion for every day of the year. A scholar of the history of French cuisine and an excellent cook himself, he associated with the great chefs of his time, notably Jules Gouffé, and helped to establish gastronomy as a genuine literary subject.
