DUBOIS (Urbain) & BERNARD (Émile). Classical Cuisine. Practical, reasoned and demonstrative studies of the French school. An illustrated work comprising 77 engraved plates and a frontispiece encompassing within its frame all the theoretical guidelines, in accordance with the order and principles of haute cuisine. Paris, E. Dentu, 1888. 2 vols. in-4, LXIV-432 and [4]-491-[3] pp., with 77 plates, most within the text, with the exception of six (numbered 1, 2, 5, 44, 61 and 77, as separate plates with serpentine borders), 3,544 recipes described, green half-chagrin, decorated ribbed spine, chagrin-textured cloth covers (contemporary binding). A few water stains at the end of Vol. I, but a fine copy. The work is a great classic, and was first published in 1856 (at that time it consisted of a single volume); it was divided into two volumes from the 1869 edition (the third). This edition is the thirteenth and reproduces the text and illustrations of the 1886 edition. Urbain Dubois (1818–1901), a pupil of Louis Haas in the service of the Rothschilds, enjoyed a highly successful career as a chef in the service of the elite: at the time, he was head chef to Emperor William I, King of Prussia.
