Description
GALLAIS (Auguste). A Monograph on Cocoa, or a Handbook for the Chocolate Lover. A work containing a description, history and cultivation of cocoa, the analysis and commercial characteristics of cocoa, and the preparation and properties of chocolate [...] Paris, Debauve & Gallais, 1827. In-8, light brown cloth-bound cardboard; plain spine, title label in red morocco leather (rebound in the mid-19th century). First edition of this important work on the history of the cultivation and trade of cocoa and chocolate. It is illustrated with a fold-out map of Central and South America, partly serving as a frontispiece, and two botanical plates, one of which is fold-out. A few small foxing spots. Founded in 1800 by the pharmacist Sulpice Debauve, former pharmacist to Marie-Antoinette, Debauve & Gallais is one of France’s oldest chocolate-making houses. Debauve created the famous ‘Pistoles’ for the queen – chocolates designed to mask the taste of medicines – before becoming a supplier to the courts of Napoleon I, Louis XVIII, Charles X and Louis-Philippe I. Joined in 1823 by his nephew Jean-Baptiste Auguste Gallais, also a pharmacist and a pioneer in the scientific study of cocoa, the company developed dietary chocolates and pioneered new manufacturing processes. Renowned for the quality of its products and having won numerous awards at World’s Fairs, it remains today one of the oldest French chocolate houses still in operation. (Vicaire, Gastronomy, p. 382.)
