Paris, Garnier frères, 1887. 2 vols. in-4, XLIV–278 pp.; [3] ff., 357 pp., text in two columns, with 60 black-and-white plates as inserts, with serpentine decoration, green half-chagrin, ornate ribbed spine, chagrin-textured cloth covers, speckled edges (publisher’s binding). Some foxing, but a good copy. First edition of this highly classic treatise, very well organised and of undeniable educational value, constituting a veritable culinary encyclopaedia at a time when gastronomy reached a peak from which it could only subsequently decline.
