CHAPTAL (Jean Antoine). The Art of making wine. Paris, Deterville, 1807. One volume in-8, 19th century half-basane, smooth spine with gilt title. XIX, 382 pp. Scattered foxing. 1 folding plate engraved by Sixdeniers after Saint-Romain. Second edition much enlarged. In this major work, Chaptal deals with the entire wine-making process: the nature and composition of grapes, ripeness and harvesting, alcoholic fermentation, the role of sugars, yeasts and temperature, clarification, racking, fining, conservation, ageing, as well as wine spoilage and disease. In particular, Chaptal developed his research into enriching must with sugar in order to improve fermentation and wine quality in cold regions, a practice that gave rise to the term "chaptalisation".
