Bonnefons denounces the "gargotage of cooks who disguise and garnish their dishes with confusion". Sean Tackrey, a Californian winemaker, was the first to highlight the interest of pages 34 to 55. According to him, this is the one and only 17th-century French text dealing in detail with vinification, applied in particular to wines from the Paris region.
