Paris, Garnier, 1887. 2 volumes in-4, burgundy calf, spine ribbed and decorated, covers preserved (Modern binding). One of the greatest cookery treatises of the 19th century: 5000 titles and 700 observations, 330 drawings on 60 plates, engraved by Blitz. Along with La Cuisine classique by Dubois and Bernard, this work remains the standard manual of French cuisine. It was written while the author, a socialist, was in prison for several years after the Commune. "It can be said that Garlin's work will remain as one of the most accurate examples of the cuisine of the great restaurants of our time" (Vicaire, 386).
