Description
LA CHAPELLE (Vincent). Le Cuisinier moderne, qui apprend à donner toutes sortes de repas, en gras et en maigre, d'une manière plus délicate que ce qui en a été écrit jusqu'à présent. Luzarches, Daniel Morcrette, 1984. 5 volumes in-8, olive green sheepskin, smooth spine decorated with a polychrome and gilt trellis, large gilt plaque on the covers, gilt lace on the edges and inside, gilt edges on marbling, specially designed endpapers printed in five colours, lined slipcase (publisher's binding). Identical reprint of the first French edition (1762), the only complete edition, of the rarest and most important of the great French treatises of the 18th century (over 1600 pages and 2000 recipes, 13 plates and 5 tables). The first English edition, in one volume, dates from 1733. Edition of 220 copies, this one numbered n°2 and signed by D. Morcrette. "La Chapelle is the only cook of the Ancien Régime who is both a Franc-Tireur and a Freemason. Our author publishes himself, completely escaping the booksellers' traffic!... The copies of this book were almost all destroyed after the author's death, which occurred only a few years after its publication..." (Daniel Morcrette). (Daniel Morcrette). Vincent La Chapelle was the first international chef. He travelled to England, France, Holland, Portugal, probably Germany and the East Indies. He invented the modern coulis and the basic Spanish sauce.
