Description
[DURAND (Charles)]. Le Cuisinier Durand. Nîmes, P. Durand-Belle, 1830. In-8, fawn half-basin, smooth spine decorated with gilt fillets (period binding). First edition of this important work on southern cooking.
At the head of the book is a poem in praise of the author, Durand, the leading caterer in Nîmes, which was published in the Journal du Gard on 5 January 1810. This manual, which includes almost 900 recipes, also contains a glossary of culinary terms and instructions on table setting. A notice (p. 480) informs readers that "people who do not want to go to the trouble of making spice salt will find some at the author's shop, rue Notre-Dame, in Nîmes".
Charles Durand, born in 1766, was an exceptional cook. He worked in the service of great houses and the King of Spain even asked him to run his kitchens, but Durand refused to go abroad. He took over the famous Audibal establishment in Nîmes.
His recipes were innovative: hot snipe pâtés, minced hare, etc.
Attached is a sheet signed by the cook and addressed to "M Dugaller" on 7 August 1804, for "un fricandeau / une fricassé de poulles (sic)/ un fricandeau/ un paté chaud" all for 12
10, "for acquired Durand".
Endpapers renewed. Joints cracked, corners rubbed. Some foxing. Missing the false title, and, at the end of the work the Errata.
